Some nights, you just don’t want to dress for dinner. Order your restaurant meal off the regular menu for complimentary pickup — or delivery straight to your home (for an additional fee).
Mount Rosa Restaurant
Open for: Breakfast, lunch, dinner (Monday–Saturday) and Sunday brunch
The Mount Rosa Restaurant is Vi at Highlands Ranch’s dining destination for breakfast, lunch and dinner, with each meal featuring seasonal and locally sourced ingredients whenever possible. We offer scratch-made desserts prepared by our in-house pastry chef, often served with homemade ice cream.
The restaurant also offers a sumptuous Sunday brunch to wind down the weekend in delicious fashion.
Dad Clark Bar
Open for: Evening wine, beer and cocktails, light bites (every day)
Belly up to the Dad Clark Bar for a before-dinner beverage or pre-theater bites with friends!
The bar is also a great place to enjoy the Mount Rosa Restaurant’s full menu in a casual, cozy setting.
Meet Chef Greg Strickland
Executive Chef Greg Strickland oversees the culinary program for Vi at Highlands Ranch, including menu creation and food preparation. Originally from Hialeah, Florida, Strickland has more than 20 years’ culinary experience and is a Certified Executive Chef, Certified Dietary Manager and Certified Food Protection Professional.
